Instructions
Make a white sauce instead of flour, liquid 50 g of butter and milk.
Season with salt, pepper, nutmeg and, off the heat, then add 80 g of butter, parmesan, egg yolks and, separately, the clear mounted to snow.
Boil the noodles in salted water, drain, toss with the sauce, then pour into a mold previously buttered and cook in the oven at moderate heat, for 20 minutes.

- 2 tablespoons of flour
- 75 cl of milk
- Grated parmesan cheese
- 150 g of butter
- 4 eggs
- 400 g of type pasta noodles
- Salt
- Pepper
- Nutmeg
