Baked sole
Instructions
Sliced courgettes cooked in a pan with hot oil, add salt, pepatele, add chopped Basil and a sprig of Rosemary.
Meanwhile, stir in tomato sauce, chopped 30 g butter and salted.
Add the tomato to Zucchini, when these are almost cooked, and let them stand for good, then keep them warm.
In a separate skillet you browned 50 g of butter and lay the fillets of sole.
Brown them well on both sides until they will be crisp.
Now with the remaining butter, grease a baking pan where it'll rank cover fillets with Zucchini with tomato sauce.
Sprinkle with the grated bread crumbs and finished with melted butter.
Put the Pan in the oven at 180 degrees until the surface is golden.
Before serving sprinkle with chopped Basil and lemon.

- 3 sole fillets
- 100 g of butter
- 20 g of melted butter
- 2 tablespoons of olive oil
- 500 g of small zucchini
- 200 g of tomato pulp
- Rosemary
- Basil
- Little of flour
- Grated bread crumbs
- 1 lemon
