Wash the soles and dry, place them in a pan of baked porcelain imburrando the Fund; season with salt, pepper and in the spaces between the sole and the other put a bit of chopped scallions.
Drain the liquid and butter sole soak by greater or lesser wine completely, add a bouquet garni consisting of parsley, thyme and bay leaf, cover with the cream and bake at 250 degrees for 20 minutes.
