Sole with Vegetables (Sogliole con Verdure)
Instructions
Blanch the beans for 5 minutes in boiling water, drain and remove hard skin.
Peel and chop the onion and sauté in 2 tablespoons oil.
Combine the peppers, washed hulled and cut into strips and the beans.
Add salt, pepper and cook for 10 minutes over low heat.
Meanwhile, flour the sole and cook them in a pan with a little butter and 2 tablespoons of olive oil.
Season with salt and pepper.
Place the soles on a plate and top with peppers and beans.

- 4 soles previously cleansed dab
- 4 red peppers
- 400 g of frozen fava beans
- 1 onion
- 4 tablespoons of olive oil
- Butter
- Flour
- Salt
- Pepper
