Thaw the soles, deprive them of skin, wash them, dry them, dip in flour, then in beaten egg and finally in breadcrumbs.
Fry the flounders in the hot oil and Brown on both sides.
Remove excess grease with paper towels and sprinkle with lemon juice.
Work 30 g butter with garlic juice, chopped parsley, a pinch of salt and pepper.
Put the butter on the fish and serve.
