Instructions

Prepare a syrup by boiling for 5 minutes 90 cl of water and 350 g sugar; then leave to cool.

Chop the peel of 3 lemons and add to the syrup.

Let it sit for 2 hours.

Then add 25 cl of lemon juice and pass it in the strainer.

Add an egg whites mounted to snow.

If you are using an ice cream maker, follow the directions for use.

Otherwise put the sorbet in a dish in the freezer.

With a fork, stir well and repeat every 30 minutes, 3 or 4 times.

Extract the sorbet from freezer 5-10 minutes before serving.
