Soufflé in cognac
Instructions
Melt the butter, stemperarvi the flour to get a compact, dilute with milk by pouring a little at a time.
Bring to a boil without stopping to shoot.
Remove from heat and stir in the sugar, starch and cognac.
Turn hard and rest a little longer, then mix in the egg yolks and the egg whites firm with little salt and 2 drops of lemon.
Pour into a greased baking dish and sprinkled with sugar.
Bake in hot oven for 30 minutes.
