Artichoke souffle (3)
Instructions
Clean the artichokes, slice them thinly and put them in water and lemon.
Cook for 15 minutes in 30 g butter, salt and pepper.
Mix the grated cheese bechamel sauce, artichokes and egg yolks one at a time.
When the mixture is cool add the egg whites firm.
Pour into a buttered mould and powdered with breadcrumbs and bake at 170 degrees for 30 minutes, then to 200 degrees for 15 minutes.
Serve immediately.

- 4 artichokes
- 50 cl of bechamel
- 50 g of butter
- 1 lemon
- 1/2 teaspoon of breadcrumbs end
- 2 tablespoons of parmigiano
- 3 eggs
- Salt
- Pepper
