Potato souffle
Instructions
Boil the potatoes and put them in the potato masher.
Put in a saucepan, put on the heat and mix in the butter and cream mixture.
Stir and cook for 15 minutes.
Turn, add salt, pepper, perfumed with a bit of nutmeg.
Let cool then stir egg yolks one at a time, diced ham, grated cheese, and whipped egg whites until stiff.
Pour the mixture into a baking dish, greased with butter and powdered with breadcrumbs.
Put in a preheated oven at 200 degrees for 20 minutes, then lowered to 180 degrees for 5 minutes.
Never open the oven during cooking and serve the soufflé as soon as ready without make it deflate.
