Ham spinach spaetzle
Instructions
Cook spinach, squeeze and pass them through a sieve.
Add water, the eggs, salt and a pinch of nutmeg.
Beat until you have a batter of medium consistency and let it sit for 1/2 hour.
Bring to a boil a pan of salted water and with the appropriate hoopstick pass the batter in the water.
There is a system even without the special tool but I strongly advise against.
Let come afloat the gnocchetti and remove them with a slotted spoon.
Pass them quickly in cold water.
In a saucepan capable heat 30 g of butter, then add the chopped cooked ham, annaffiarlo with wine.
Let it boil for a short time and add the cream, parmesan cheese, salt and a generous ground pepper.
Throw the dumplings in Gravy, mix them well and serve them well.
They are very comfortable because you can prepare well in advance and throw them in the sauce at the last minute.
