Spaghetti with Eggplant (Spaghetti con Melanzane)
Instructions
Fry the aubergines, cut into cubes and put them aside.
After eliminating all the frying oil, sauté the garlic in the same pan with the chilli, add the peeled tomatoes, Basil and a pinch of salt.
When the sauce is almost ready, add the Eggplant and let it stand for a few minutes.
Cook spaghetti pour into a tureen with mozzarella cut into thin strips, combine the sauce with Eggplant and stir.

- 400 g of type pasta spaghetti
- 3 eggplant
- 250 g of mozzarella
- 2 cloves of garlic
- 500 g of ripe tomatoes
- Hot pepper
- Olive oil
- Salt
- Basil
