Skewers of anguilla
Instructions
In a large bowl, emulsify oil, vinegar, lemon juice, salt, pepper.
Add a Laurel leaf.
Cleaned and skinned eels, cut into logs of three inches, place them in the marinade and lasciateveli for over an hour.
Drain them and infilateli in long sticks or skewers, alternating with a Laurel leaf and a small rectangle of bread.
Put the skewers on a baking sheet, spray them with the marinade and cook in preheated oven at 180 degrees for about 20 minutes, turning and by anointing them occasionally.
Serve very hot.
Accompanying wines: Trentino DOC Pinot Grigio, Montecarlo Bianco DOC, DOC Fiano.
