In addition to preparation and cooking time, you must account for 4 hours for the marinade.

Mix all ingredients, add the meat and let marinate for 3-4 hours.
Stick the meat slices, accordion on wooden skewers.
Cook on griddle or barbecue grill for 4 minutes, turning once and brushing often with marinade.
Garnish with spring onion.
Suggested wine: Squinzano.
