Spinach in white sauce
Instructions
Clean and Wash spinach thoroughly.
Boil them in salted water acidulated with lemon and cut into slices.
Remove the lemon, drain and squeeze the vegetables and keep warm on a serving dish.
Prepare the sauce.
In a pan put chopped shallots, wine and a cup of water.
Bring to a boil over medium heat, lower the heat and reduce the liquid by half.
Set aside, add salt, pepper, let cool, stir in the softened butter, mix and put on fire.
With a whisk, continue to whisk until the sauce reaches a certain consistency.
Add some thyme leaves.
Sprinkle grated cheese spinach and cover them with white sauce.
Serve immediately.

- 1000 g of spinach
- 150 g of butter
- 10 cl of dry white wine
- 30 g of grated cheese
- 2 small shallots
- 1 lemon
- Some leaves of thyme
- Salt
- Pepper
