Dark chocolate mousse
Instructions
Whip the egg yolks with half the sugar and when they are well combined frothy little by little the marsala.
Put on the fire to low heat and stirring let the mixture becomes very swollen.
Add the isinglass soaked and squeezed, mix well, remove from heat.
Add the rest of the sugar, cocoa and let cool without the tireless work of mixing.
Mix the whipped cream and crushed amaretti.
Pour the mixture into a mold oleate and keep in refrigerator 5 hours.
Drafted and serve.
Ingredients and dosing for 6 persons
- 60 g of bitter cocoa
- 400 g of whipped
- 200 g of sugar
- 100 g of amaretti biscuits
- 4 eggs
- 2 sheets of isinglass
- 1/2 cup of dry marsala wine
- Sweet almond oil
