Fava bean ragout with rags
Instructions
For the dough: knead vigorously the flour with the egg, a pinch of salt and oil; pass the dough in the machine to get the sheets that you will then to irregular rhombuses (rags).
For the sauce: Saute shrimp tails in 1 tablespoon hot oil.
In a large skillet, stewed with 2 tablespoons of olive oil and chopped garlic, Fava Beans and peas; Add the courgette flowers, clean rags already boiled al dente, salt, pepper and jump all over high heat.
Finish the pasta with crawfish tails, the aromatic thyme and chopped Marjoram and serve immediately.

- For the rags (paste):
- 200 g of flour
- 2 eggs
- 1 tablespoon of olive oil
- Salt
- For the sauce:
- 240 g of peas and broad beans blanched
- 12 shelled shrimp tails
- 8 pumpkin flowers
- 1 clove of garlic
- Thyme
- Marjoram
- 3 tablespoons of olive oil extra virgin
- Salt
- Pepper
