Tagliatelle alla gricia
Instructions
Cut the bacon into slices not too thin and cut the strips 2 cm wide.
Put them in a cast iron pan and fry over a low heat until they take color, adding a bit of chilli.
In a pot with boiling salted water then the noodles and cook them al dente; drain, place in a bowl and toss with guanciale and a good handful of grated pecorino cheese.

- 400 g of type pasta noodles
- 200 g of pork cheek
- 1 handful of grated pecorino cheese
- 1 bit of chili
- Abundant of salt
