Instructions
In a large frying pan melt the butter soft flame.
Add the smoked salmon cut into strips not too long and let Cook for 2-3 minutes.
Turn up the flame, pour the vodka and let it evaporate for a few seconds.
Lowered the flame, add the cream, paprika and pepper.
When the cream is warm remove from heat because the salmon should not overcook.
Apart from Cook the noodles al dente; remember not to drain too.
Add the noodles to the salmon and sauce you blast for a few minutes over medium heat.
If the mixture is too dry with some diluted spoonful of pasta cooking water.
Spread the hot noodles in individual dishes and garnish with Parmesan cheese (optional) and a spoonful of lumpfish ROE.
Ingredients and dosing for 3 persons
- 500 g of type pasta tagliatelle all'uovo
- 50 g of butter
- 250 g of smoked salmon
- 10 cl of vodka
- 20 cl of cooking cream
- 1 pinch of spicy paprika
- 1 sprinkle of freshly ground black pepper
- Some scales of parmesan cheese (optional)
- 1 tablespoon of lumpfish eggs
