Instructions
Split the mincemeat into four pieces and place them in as many dishes giving each shaped like a small dome.
Scavatela slightly at the Center and deponetevi yolk raw.
Surrounded with meat cut thin onion rings, capers, chopped anchovies and parsley.
Served with olive oil, lemon juice, salt and pepper.
Each diner will use these ingredients for seasoning the meat as you prefer and then, using a fork, mix the flavors.
If you like, adding a bit of French mustard, sweet or semi-sweet, makes it more aromatic the flavour of this dish.
Accompanying wines: the crispness of this preparation leads to prefer structured white wines: Sauvignon DOC Collio, Cervaro Della Sala VdT Dell'Umbria, Fiano Di Avellino DOC.
