Instructions
Chop fine the onion and let it Brown with a little butter; aggiustatela of salt.
Remove from heat the sauce and let it cool.
Meanwhile, beat vigorously the four egg yolks in a bowl; do likewise for the whites in a second bowl until consistency of snow.
Add the red and then the whites to the mixture, then the milk and 2 tablespoons of flour that you absorb from compound; pepper.
Put pot on the double boiler and cook stirring constantly until the sauce has taken a look creamy.
