Put the meat on the bottom of the bowl and overlay it with chopped vegetables, onions, parsley and chopped fennel; Add salt, pepper and a drizzle of melted butter.
Cover with a double greaseproof paper fastened with string, put a lid on and go in the oven for 3 hours.
