Timbale of noodles and mushrooms
Instructions
Knead the flour with 2 egg yolks, melted butter but not warm, sugar and a little salt.
Knead the dough until it becomes a smooth ball that you will leave to rest, covered with a towel moistened for the time necessary to prepare the stuffing, and meanwhile there dedicated to noodles.
Al dente, drain and season with the sauce obtained by wilting in the butter diced ham and thinly sliced mushrooms.
Sprinkle Parmesan cheese.
The sauce can be customized with the thyme, and a generous ground pepper may be the final touch.
Take the dough and divide in half into two masses, a roughly double the other.
Stendetele with a rolling pin into two very thin sheets.
With the widest edge and coated the bottom of a baking pan well buttered.
Fill the timbale with the noodles and close it with the second pastry.
Trimmed edges and sprinkle the surface with butter flakes.
Bake at lively enough heat for about twenty minutes.
Before serving the timballo, let it stand for a few minutes.

- For the dough:
- 200 g of flour
- 2 eggs
- 2 tablespoons of sugar
- For the filling:
- 320 g of type pasta noodles
- 100 g of ham
- 100 g of mushrooms
- 50 g of butter
- 50 g of grated cheese
- Thyme
- Minced 1 of pepper
