Instructions
Prepare the coffee, which should not be very strong, and put it in a bowl to cool.
Separate the egg yolks from the whites and keep them aside.
Mix the egg yolks with sugar vigorously until mixture is frothy and then add the mascarpone cheese that should be very cool.
Mix well and then pour in the rum.
Meanwhile, whip the egg whites until stiff, then add themselves to the mascarpone cream.
Now you begin to soak the ladyfingers in the coffee and put them in a baking dish, make a first layer and cover with the cream.
Other biscuits, wet another layer and cover with the other cream continuing until exhaustion ingredients (with this dose you will need at least two dishes).
The last layer of cream spread a good amount of cocoa powder to coat everything and then put in the fridge for 4-5 hours before serving.

- 800 g of mascarpone
- 8 fresh eggs
- 1/2 cup of rum
- 200 g of sugar
- Cocoa powder
- 750 g of biscuits savoiardi
- 100 cl of coffee
