Jerusalem artichokes in green sauce
Instructions
Put in the mixer parsley, anchovies and capers, operate the mixer and add the oil.
Add a few drops of lemon juice.
Transfer the sauce to a bowl and combine a ground black pepper.
Scrape the Peel Jerusalem artichokes, rinse, Pat dry and slice thinly.
Place the Jerusalem artichokes in the serving dish and cover them with the amount of desired sauce.
This sauce can add a chopped hard-boiled egg.
In this way you get a light meal of high nutritional value.

- 500 g of topinambur
- 50 g of chopped parsley
- 2 anchovies de-boned
- 1 handful of salted capers
- 1/2 cup of olive oil
- Black pepper
- Lemon juice
