Instructions
Prepare the dough: in a bowl, sift 175 g flour with half a teaspoon of salt and a pinch of chilli.
Add 100 g of butter in small pieces and mix with your fingers until you get the consistency of bread crumbs.
Add cheese, egg yolk and two or three tablespoons of water.
Mix and knead the dough until it becomes smooth and firm.
Make a ball and put it in the refrigerator for an hour.
After this time, turn the oven to 200° c (thermostat 6).
Flour the work surface and roll out the dough.
Grease a pan with a diameter of 24 cm and foderatela with pasta.
Stamped on the bottom with a fork and cover with parchment paper and dried beans.
Bake in oven for 10 minutes; remove the paper and beans and simmer again for eight minutes.
Let cool the cake base.
Do not switch off the oven.
Meanwhile prepare the garnish.
Melt the butter in a saucepan.
Peel and chop the onions.
Let them FRY in butter for about fifteen minutes until they become transparent.
Remove the Pan from heat and let cool.
Carefully fold in the flour.
Beat the eggs and the cream with a fork and add them, always by the onions.
Seasoned with salt, pepper and nutmeg.
Lower the oven to 170 degrees (5 thermostat).
Pour the filling on cake and bake in oven for about 45 minutes.
Served hot.
