Golden lamb chops
Instructions
Scalded the lamb chops in a pan with a little oil and spruzzandole with lemon juice; half-cooked, let them fasciatele with a thick béchamel to which you've combined two egg yolks and a handful of grana cheese, gently put them in breadcrumbs and then doratele in very hot oven for 10 minutes, turning once.
To be served with a sauce made from purée of asparagus which incorporated a knob of butter and a little cream.

- Lamb chops
- Little of olive oil
- Lemon juice
- Bechamel
- 2 egg yolks
- 1 handful of grated parmesan cheese
- Breadcrumbs
- For the sauce:
- Asparagus
- 1 walnut butter
- Little of cream
