Asparagus Pie (Torta Salata Agli Asparagi)
Instructions
Make a Pate brisée dough with flour, butter, cold water (as much as needed to get a hard dough) and a pinch of salt.
Peel, wash and boil for 10 minutes the asparagus, then cut them roughly.
In a bowl beat the eggs with the cream and Parmesan cheese, then add the asparagus and stir.
Roll out the pectin then use it to line a buttered and floured round mold and pour in the mixture.
Bake in oven at 180 degrees for 40 minutes.

- 500 g of asparagus
- 200 g of flour
- 200 g of cream
- 150 g of butter
- 50 g of grated parmesan cheese
- 4 eggs
- 1 pinch of salt

- Flour for the baking pan
