Soft cake with pine nuts
Instructions
Together in a bowl the softened butter with half of sugar and roll them into balls with a wooden spoon until you have a soft cream.
Add the honey, cheese, flour and egg yolks into egg whites aside.
Stir.
100 g toasted pine nuts on a nonstick frying pan, finely mince in the mixer and add to the dough with the cream.
Whip the egg whites with a pinch of salt and remaining sugar until you have a very thick, glossy meringue.
Pour the other ingredients with a whisk.
Lined with baking paper a mold by 20 centimeters in diameter, pour the mixture, sprinkle with the remaining pine nuts and bake in hot oven at 180 degrees for one hour.
Serve with a sprinkling of icing sugar.

- 450 g of petit suisse cheese (goat or cow)
- 200 g of sugar
- 4 eggs
- 2 tablespoons of honey
- 10 cl of fresh whipping cream
- 50 g of flour
- 120 g of pine nuts
- 50 g of butter
- 1 pinch of salt
- 1 dusting icing sugar
