Tortiglioni with zucchini sauce
Instructions
Peel, scrape lightly and cut into slices Zucchini, then FRY them in a pan with margarine and 2 tablespoons oil.
Continue cooking over low heat for 20 minutes, add salt and add if necessary, a bit of broth (with nut).
Meanwhile mix the soup tureen that dress the pasta, a whole egg, egg yolk, cheese, salt and pepper, in order to obtain a smooth cream.
Pour the cream, tortiglioni drained on the zucchini and sprinkle with grated Gruyere cheese.
Stir and serve hot.

- 400 g of type tortiglioni pasta
- 500 G = = Zucchini
- 100 g of cheese dover
- 80 g of gruyere cheese
- 2 eggs
- 2 tablespoons of olive oil
- 30 g of margarine
- Salt
- Pepper
