Trippa alla moda of porto
Instructions
Wash in plenty of water 1000 g precooked tripe.
Cut it into thin strips and sauté in a pan with a little oil with 2 sliced onions, 2 Bay leaves and chopped 4 garlic cloves.
Deglaze with white wine and deglaze, add salt, pepper and cover with hot water.
Cover and let simmer for 2 hours.
Add 2 tablespoons of tomato paste and cook another 30 minutes.
Sprinkle with a little dry Sherry when serving accompanying with steamed new potatoes.
