Poached eggs of provost
Instructions
Prepare poached eggs: in a small saucepan bring to a boil the salted water with a little vinegar; break an egg into a Holster, doing so remains whole, and slide it into the water to boil gently.
As soon as you remove the congealed with pierced and put it to drain on a cloth.
Cook in the same manner as other eggs, one at a time.
Have, without a break in single-portion dishes.
Sprinkle each egg with a bit of lukewarm broth, add a slice of tomato, anchovy fillet, a pinch of oregano and cover with a slice of mozzarella.
Cook in hot oven until the mozzarella has melted and has picked up a little color.
Accompany with mashed potatoes.

- 4 eggs
- Little of wine vinegar
- 1 glass of broth
- 4 slices of tomato
- 4 anchovy fillets
- 4 slices of mozzarella
- Oregano
