Instructions

Clean the mushrooms and remove the stems (can be used for a sauce), wash and dry the chapels and cut them into thin slices.

In a saucepan melt 50 g of butter, saucepan, heat mushrooms for about 10 minutes, adjust salt and pepper.

Four buttered dishes portion, put on the bottom of each mushroom and base over sgusciatevi eggs.

Salted just the egg whites and cook in preheated oven at 160 degrees for about 10 minutes or until the egg white has curdled.

Serve immediately at the table in the same pan.
