Scrambled eggs with sauce
Instructions
Beat eggs slightly in order to mix egg whites and yolks.
Pour into a skillet, preferably nonstick, where you did melt a knob of butter.
Cook the mixture on low heat stirring constantly for 7 minutes.
Just see that the eggs are curdled, add a bit of butter, salt and remove from the Pan (the residual heat would continue cooking of eggs).
Meanwhile, in a small saucepan, place a moderate flame, Cook the chopped tomato, 1 tablespoon of olive oil and a little salt.
Passes scrambled eggs directly on individual plates and pour over the tomato sauce to which you added the chopped capers.
