Scrambled eggs with taleggio
Instructions
Cut into cubes approximately one centimeter taleggio and grate the Parmesan.
Heat a nonstick frying pan with a little olive oil, sprinkled with a brush.
When it is hot, break the eggs into it and mix with a wooden spoon.
Add taleggio and half the Parmesan.
Stir from time to time, to turn the eggs and mix with cheese.
Pepper and salt lightly.
Cook until desired consistency.
Cut a slice of bread, divide it into two, sprinkle with a little olive oil, a grating of pepper and place it in the middle of the plate.
Put a portion of eggs covering part of the bread.
Join a handful of Parmesan cheese, pepper and serve immediately.
Repeat the process for each portion.

- 80 g of taleggio cheese
- 40 g of parmigiano
