Peel the potato and clean the leeks, cut across into thin slices and saute in a sauce made with shallots and a little olive oil.
After a few minutes add about half a liter of water, add salt and simmer for 30 minutes.
With immersion Blender (or food mill) turned into creamed vegetables, add the cream, a pinch of nutmeg and cook for a few minutes.
Garnish with chopped chives and serve hot.
