Zucchini in oil
Instructions
Peel the squash, wash them, dry them and thickly to the thickness of a few millimetres.
Place on a wooden board covered with a clean kitchen towel and put them in the Sun to dry for few hours pinwheels.
Then FRY them in plenty of hot oil placing them, as they are ready, on a sheet of absorbent paper towels.
When are cold place in layers in a large bowl, season each layer with salt, garlic and mint leaves.
Cover with vinegar and let it sit at least a couple of hours before serving.
Ingredients and dosing for 4 persons
- 600 g of zucchini
- 1 clove of garlic
- 2 sprigs of fresh mint
- Wine vinegar
- Olive oil
- Salt
