Instructions

Wash the zucchini, cut them in half lengthwise and scavatele with a sharp knife.

Place with the concave part upwards in an oven dish brushed with oil.

Place them in a preheated oven at 200 degrees for a few minutes.

Meanwhile, in a bowl with a little olive oil the anchovies washed and de-boned to reduce them to cream.

Mince the garlic, parsley, basil, Zucchini pulp and pitted olives, gather everything into a bowl.

Unite also tomatoes, peeled and chopped and seeds private, mixed, pour a little olive oil, anchovy cream, add salt and pepper, mix everything together and fill the zucchini with the mixture.

Distributed over the mozzarella, cut into cubes and cook in preheated oven at 180 degrees for 20 minutes.
