Zucchini in carpione
Instructions
Wash away, wash the zucchini and cut lengthwise.
Heat plenty of oil in a pan and then the courgettes when the oil starts to smoke.
Drain the zucchini when they are crisp and golden brown and season with salt.
Arrange them on a tray and soak with vinegar.
Serve cold.
