Barley soup (3) (Zuppa D'orzo (3))
Instructions
In a saucepan, heat 3 tablespoons of olive oil and let dry chopped onion and Sage.
Peel and wash the cabbage, cut it into strips; clean, wash and chop the spinach; Add the vegetables to the sauce.
After a few minutes, stir and pour the hot broth, cover and cook on moderate fire for a quarter of an hour.
Add barley, adjust the salt.
Continue cooking for about half an hour.
Turn Off.
Sprinkle with cheese and serve the soup with croutons.
