Bean Soup (Zuppa di Fagioli)
Instructions
In a crock pot put to boil the beans need to soak them for an entire night, adding to the beans the sliced onion, one tablespoon of olive oil, salt and Rosemary.
When the beans are cooked, pour into a soup tureen in which have fragmented the bread.
Season with the remaining olive oil and coarsely ground black pepper at the moment and let it sit in the heat.
Served after having stirred the soup with the wooden spoon.

- 500 g of dried beans
- 1 onion
- 1 sprig of rosemary
- 15 cl of olive oil extra virgin
- Salt
- Pepper
- 400 g of bread stale
