Instructions
Wash well spelt, it is important to remove all the powder that is located on the grains, otherwise when you bring it to a boil creates a patina on the surface of the water, causing a similar effect to boiling milk.
Leave the farro to soak for at least 6 hours and cook for half an hour.
The cooking time depends on the freshness of spelt: for what I had I enough 20 minutes of baking.
Clean the vegetables, Chop fine and let them dry in a pan with a little oil and salt, cover and stew low flame for a quarter of an hour.
When you have finished cooking, add the vegetables, add the fennel seeds, oil and tahini and put on the fire for a few minutes while stirring.
