Lettuce Soup (Zuppa di Lattuga)
Instructions
In a saucepan melt the butter, chopped onion and insaporitevi then add lettuce washed, dried and cut into strips.
Add 3/4 of water and cook fresh focus for about twenty minutes.
Add the potatoes cut into cubes and continue baking for an hour less.
Blend everything for a long time to get a thick and creamy mixture.
Pour the shake into a pot, adjust salt and pepper, heat.
Meanwhile, in a bowl beat the eggs with the cheese and pour over the hot lettuce soup.
Serve with slices of bread buttered and lightly toasted.

- 2 heads of lettuce salad hood
- 2 potatoes
- 1 onion
- 2 eggs
- 30 g of butter
- 30 g of grated cheese
