Zucchini Soup (Zuppa di Zucchine)
Instructions
In a saucepan, put three tablespoons of olive oil, onions cut into thin slices, peeled tomatoes, semi private and divided into four wedges, Zucchini to match.
Cook over medium heat for about 20 minutes.
Add the broth, adjust the salt, bring to a boil, reduce the heat and let simmer until zucchini is rather defeats.
At this point blank, along with beaten egg soup with grated cheese and salt, stirring quickly.
Pour over slices of toasted bread and serve.
