Vegetarian soup
Instructions
Sauté in butter and oil, carrots, potatoes, turnips and leeks, add the chicory, the Belgian and trevisana cut into strips.
To braise it, add the broth and cook for 45 minutes.
Then add a knob of butter and plenty of Parmesan.

- 2 carrots
- 2 potatoes
- 2 rape
- 2 leeks
- 1 bunch of chicory salad
- 2 heads of belgian salad (endive)
- 1 head of trevisana salad
- 500 cl of broth
- Butter
- Olive oil
- Parmigiano
