Remove the stems from the artichokes, trim away the rough part outside, then cut them into small pieces rather small.
In a pot put the finely chopped spring onion, artichoke pieces, the broth and bring to boiling.
Withdrawn.
In a bowl beat the eggs with the Parmesan, pour over the stock, stirring rapidly.
Served with fried bread croutons.
