Instructions

Fishing must be ripe, but firm and fragrant.

Wash the fish and cut it into quarters without peeling and holding by the kernel.

Put peach and hazelnut in a jar and cover with vinegar.

Cover the pot and let marinate for 4 days.

Then filter and pour the vinegar obtained in a bottle.

Peach vinegar can be used for seasoning salads and accompaniments for celery, fennel and peppers.
