Beans with capuntini
Instructions
The capuntini are tiny semolina dumplings, flour and water.
After a night of soaking, boil the beans with an onion and a dash of oil.
Braise in olive oil chopped garlic, onions and herbs.
Add the tomato, beans with two ladles of the cooking water, salt and pepper.
Add the boiled capuntini apart and finish with cheese.
Ingredients and dosing for 4 persons
- 200 g of borlotti beans
- 200 g of type pasta handmade capuntini
- 300 g of tomato pulp
- 2 fresh onions
- Garlic
- Parsley
- Thyme
- Mint
- Grated parmesan cheese
- 1 dash of olive oil extra virgin
- Salt
- Pepper
