Cut into cubes the tomatoes and let them jump in oil for 5 minutes with garlic and oil.
Merge then chopped Basil.
Let them cool in a colander, then merge them with beaten eggs with a pinch of salt and pepper; stir the mixture and pour it into a pan with hot oil; Bake the omelet on both sides and serve with finely chopped parsley.
