Plum Dumplings (Gnocchi di Susine)
Instructions
Boil the potatoes in their skins, peel them and pass them, still hot, in the potato masher; combine the flour, eggs, a pinch of salt.
Work the dough with your hands until it is soft and smooth, form a large roll of 4 cm in diameter and cut into lots of disks with a thickness of about 2 cm.
Place in the middle of each half-disc, close the plum Plum in pasta, forming a medium-size dumplings and cook the gnocchi in salted water.
