Bean and Barley Soup (Minestrone di Fagioli e Farro)
Instructions
Boil the beans in water 250 cl after 12 hours soaked.
Brown in oil chopped herbs and add the crushed tomatoes.
Add beans, seasoning and blend.
Season with salt and add the soaked spelt for 2 hours.
Bring together cooking as cooking water and beans, if not enough, vegetable broth.
Serve with raw oil and freshly ground pepper.

- 200 g of borlotti beans
- 200 g of san marzano peeled tomatoes

- Marjoram
- Sage
